SPICY SPINACH ORECCHIETTE
Last year, we were travelling across Europe, since it was my first trip to non Asian country could not be more excited. Among all the place we visited, Italy was full of beautiful architecture and history with amazing food, cheeses and wine. Mamma Mia!!
Florence had rich architecture with beautiful old buildings and churches. It is supposed to be the wealthiest city during the Medieval time. We had a great experience with pastas', cheeses' and wine. This bring me to my latest recipe which I have tried. A pasta that has been addressed with many names - it looks like an ear, no it looks like a shell. It doesn’t really matter what it looks like but after penne this is my personal favorite. I had not tried Orecchiette before I visited Italy, last year. My husband tried The pasta at a roadside restaurant in Florence and he instantly claimed: “ This is the best pasta I have ever eaten in my life”. Ever since that day whenever we discuss as to which is the one place we would like to go again just for food it is without any doubt - Florence.
My first experiment of this new year is the Orecchiette. Please see below for the recipe.

Ingredients:
250 gyms Orecchiette
2 roughly chopped tomatoes
3 cloves of garlic
Handful of spinach
2 dried red chillies roughly chopped
1 Tsp chilli flakes
1/2 cup white wine
Salt to taste
2 tsp Parmesan cheese
Method:
1. Bring a large pot of water to boil with a pinch of salt.
2. Add the pasta once the water starts boiling. Add 1tsp of olive oil.
3. While the pasta is cooking, in another pan add 4tsp of olive oil.
4. Once the oil has heated add diced garlic. Sauté the garlic for couple of seconds.
5. Add chopped tomatoes, spinach and red chillies.
6. Once the spinach has wilted, add cooked oats with water drained.
7. Add white wine in the pan. Wait for the white wine to evaporate.
8. Add salt to taste, chilli flakes. And Parmesan cheese.
9. Serve hot on a plate. Drizzle some olive oil and garnish with some Parmesan cheese.
Tip: The above recipes is a vegetarian recipe. If you want to make it non vegetarian add some hin sliced, roasted chorizo to the sautéed pasta.
