Vegetarian Shakshuka

The passion for salads started when I realised the importance of eating healthy. I have finally come to agree that food habits are the most important part of one’s journey to get lighter. This is coming from a person who believed that only exercise is king.

This is a new recipe that I tried recently called Shakshuka. It is a Mediterranean dish and I tasted it first time in NZ when my sister-in-law’s friends’ mom made it(btw this was 3 years ago) She did not know what it was but she knew it was something that we would love it.  I am sharing the recipe with you with the hope that you will also enjoy it.
















Ingredients:
1/2 brunch parsley
1 red capsicum
1 red onion finely chopped
3 tbsp tomato ketchup
4 fresh finely diced tomatoes
500 gm fresh paneer/ cottage cheese
3-4 cloves of garlic
1tbsp olive oil

Seasoning:
1/2 tsp chilli flakes
1/2 tsp oregano

Method:

- Use a flat pan. Add oil in the pan.
- Once the oil is heated, add finely chopped garlic followed by the onions.
- Sauté the onions until golden brown.
- Add diced capsicum and stir for 2-3 mins
- Add chopped tomatoes. Sauté it for few minutes.
- Add tomato ketchup and the seasoning and salt to taste.
- Cut the paneer into blocks. (Tip: if the paneer is hard, cut in pieces and soak in hot water for few minutes)
- Take another pan. Layer the paneer pieces and add the mixture on top of the paneer pieces.
- Heat it for few minutes and garnish with some parsley and paneer pieces.
