Winter Salad
A friend asked me the other day - do you have any recipes for a winter salad and I instinctively just went - nah not really. But then, a little idea popped into my head, why not try something new with some leftovers at home - broccoli, cauliflower and kale. Actually to be honest these weren’t really leftovers but it just sounds cooler. ;);)
Sometimes it is difficult to fathom how tired you are after work unless you get home and have to decide what to cook. And if it is extremely cold then god save you. You want to eat healthy but don’t feel like soup. This was one of those days’.
Ingredients:
- 1 floret of broccoli
- 1/2 floret of cauliflower
- A bunch of kale
- 1/2 cup freekah
- Salt to taste
- Pepper to taste
- 1/2 tsp Zaatar powder
- 1 pomegranate
- 1/2 tsp black currants
- 1 tsp dried cranberries
- Goat’s cheese
- 1 Sliced avocado
- 2 tbsp toasted almonds
For dressing:
- 4tbsp olive oil
- 1/2 tsp lemon rind
- 1/2 tsp chilli flakes
Method:
- Cut the florets of cauliflower and broccoli. Add some Oliver oil, zaatar powder, salt and pepper.
- Mix it properly. Preheat the oven. Bake the cauliflower and broccoli for 25 mins at 180 degrees.
- Chop kale into small pieces. Mix it with zaatar, salt, pepper and zaatar powder.
- Around 20 mins in, add kale into the oven.
- Once it is brown take everything out.
- While you are waiting for your veggies to cook, in a pan of hot water add freekah.
- Wait for freekah to cook. It would roughly take 20-25 minutes.
- Once the freekah is cooked drain out all the excess water.
- In a serving dish, lay the cooked freekah
- Top up with the roasted veggies.
- Add the cranberries, black currants, toasted almonds and pomegranate.
- Add goats cheese as garnish
- Slice avocado and place on the top of the assembled salad.
- Add dressing on top.
Note: I have used Haloumi instead of Goat’s cheese. It tasted quite nice.
